Ingredients
- 250g plain flour
- 25g cocoa powder
- 2 teaspoons of baking powder
- 1/2 teaspoon of bicarbonate of soda
- 85g dark chocolate
- 85g white chocolate
- 100g milk chocolate
- 2 eggs
- 284ml soured cream (put away the pipette, it comes like that)
- 85g light muscovado sugar
- 85g butter

- 2 mixing bowls (or one bowl and a 1-pint measuring jug)
- Something to melt the butter in (small bowl and microwave?)
- Oven
- Muffin baking tray (metal thing with dents)
- Little paper cake/muffin cups
- Hand whisk (a fork will do)
Directions
- Turn the oven on, to 200 degrees
- Bowl 1:
- Put the flour, cocoa powder, baking powder and bicarbonate of soda into a mixing bowl
- Break up all of the chocolate into chunks, and add to the bowl
- Melt the butter (e.g. cut it up, put in a bowl and microwave for about a minute)
- Bowl 2 (or measuring jug):
- Break the eggs into the bowl (both yolk and whites)
- Beat it a bit with your whisk or fork until they're mixed up good
- Mix in the melted butter, the sugar and the soured cream
- Pour bowl 2 into bowl 1
- Mix it all together, until it is stiff
- Spoon it out into the paper cups. Don't fill them right to the brim - they'll expand a bit
- Put them in the oven for 20 minutes
- Once they're done, take them out and let them set - leave them for about 15 minutes
