Ingredients

  • 250g plain flour
  • 25g cocoa powder
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of bicarbonate of soda
  • 85g dark chocolate
  • 85g white chocolate
  • 100g milk chocolate
  • 2 eggs
  • 284ml soured cream (put away the pipette, it comes like that)
  • 85g light muscovado sugar
  • 85g butter

  • Scales (weighey things)
  • 2 mixing bowls (or one bowl and a 1-pint measuring jug)
  • Something to melt the butter in (small bowl and microwave?)
  • Oven
  • Muffin baking tray (metal thing with dents)
  • Little paper cake/muffin cups
  • Hand whisk (a fork will do)

Directions

  1. Turn the oven on, to 200 degrees
  2. Bowl 1:
    1. Put the flour, cocoa powder, baking powder and bicarbonate of soda into a mixing bowl
    2. Break up all of the chocolate into chunks, and add to the bowl
  3. Melt the butter (e.g. cut it up, put in a bowl and microwave for about a minute)
  4. Bowl 2 (or measuring jug):
    1. Break the eggs into the bowl (both yolk and whites)
    2. Beat it a bit with your whisk or fork until they're mixed up good
    3. Mix in the melted butter, the sugar and the soured cream
  5. Pour bowl 2 into bowl 1
  6. Mix it all together, until it is stiff
  7. Spoon it out into the paper cups. Don't fill them right to the brim - they'll expand a bit
  8. Put them in the oven for 20 minutes
  9. Once they're done, take them out and let them set - leave them for about 15 minutes
